For centuries brewers relied on a mystical process to turn a mixture of grains and herbs into beer and ale. As science and technology developed in the brewer’s profession, yeast was found to be at the bottom of this process and the propagation of specific yeast varieties became an international obsession. From making bread to brewing the  nest beers, yeast is at the heart of the process.
